Ingredients

Chicken Curry

  1. 250 g chicken breast, diced
  2. 2 potatoes, diced
  3. 1 carrot, diced
  4. 4 oyster mushrooms
  5. 1 onion
  6. 5 cloves of garlic
  7. 2 bird’s eye chilies
  8. 5 blocks curry paste
  9. 2 tbsp tomato sauce
  10. 1 tbsp chili sauce
  11. 3 tomatoes
  12. 10 green beans, cut into small pieces
  13. 1.5 tbsp palm sugar
  14. 1.5 tsp salt
  15. 2 tbsp sesame oil
  16. 1 sweet corn, kernels removed

Cauliflower Rice

  1. 1 head of cauliflower, chopped into small pieces
  2. 2 tbsp olive oil
  3. 0.5 tsp salt (to taste)

Chicken Katsu

  1. 500 g chicken breast, cut lengthwise as thin as possible
  2. 2 eggs, lightly beaten
  3. 5 tbsp breadcrumbs
  4. 2 tbsp all-purpose flour
  5. 2 tbsp tapioca flour
  6. 3 tsp garlic powder
  7. 2 tsp salt
  8. 2 tsp sugar
  9. 1 tsp white pepper
  10. Cooking oil as needed

Instructions

  1. Slice the chicken lengthwise as thin as possible.
  2. Marinate with garlic powder, salt, pepper, and sugar.
  3. Mix well with the chicken.
  4. Once well mixed, cover with plastic wrap.
  5. Let it rest for 30 minutes.
  6. Turn on the stove, pour cooking oil into a pan.
  7. Sauté the onion and garlic until fragrant.
  8. Slice the chilies, then add them to the pan.
  9. Stir until they become wilted.
  10. Add 500 ml water, and bring to a gentle boil.
  11. Add the mushrooms, carrots, green beans, and potatoes at the same time.
  12. Add the chicken and sweet corn.
  13. Cook until the water slightly reduces.
  14. Add the curry paste blocks.
  15. Cut 2 tomatoes and add them to the pan.
  16. Don’t forget to stir occasionally.
  17. Add 2 tbsp tomato sauce and 1 tbsp chili sauce.
  18. Add palm sugar, salt, and pepper.
  19. Stir again, cover, and cook until it reduces by half.
  20. Once the liquid has reduced, add 2 tbsp sesame oil.
  21. Serve in a bowl and set aside.
  22. Prepare the chopped and cleaned cauliflower.
  23. Place into a chopper.
  24. Pulse slowly until it forms rice-like grains.
  25. Heat a non-stick pan, add a bit of olive oil.
  26. Add the chopped cauliflower, season with a little salt.
  27. Stir until wilted, then cover briefly.
  28. Serve in a bowl and set aside.
  29. Prepare the flours, beaten eggs, and breadcrumbs in separate bowls.
  30. Coat the chicken with flour, dip in egg, then coat with breadcrumbs.
  31. Repeat until all chicken is coated.
  32. Heat oil in a frying pan until hot.
  33. Deep fry the chicken. Flip to prevent burning.
  34. When golden brown, remove and drain.
  35. Repeat until all the chicken is fried.
  36. Once everything is cooked,
  37. Plate starting with cauliflower rice, then chicken curry, and lastly sliced chicken katsu.
