Ingredients

  1. 300 g beef
  2. 300 g chicken
  3. 4 cloves garlic
  4. 3 shallots
  5. 2 tbsp oyster sauce
  6. 1 tbsp soy sauce
  7. 1 tbsp sweet soy sauce
  8. 1 tbsp fish sauce
  9. 2 tbsp sesame oil
  10. 4 tsp palm sugar
  11. 1 tsp salt
  12. 8 green bird’s eye chilies
  13. 2 red bird’s eye chilies
  14. 1 bunch basil leaves
  15. 3 large red chilies

Instructions

  1. Mix oyster sauce, soy sauce, sweet soy sauce, fish sauce, palm sugar, and salt.
  2. Stir until all ingredients are well combined.
  3. Finely chop garlic, shallots, and bird’s eye chilies.
  4. Heat a little oil in a pan.
  5. Sauté garlic, shallots, and chilies until fragrant.
  6. Add the meat, stir until evenly mixed.
  7. Add the pre-mixed sauce.
  8. Stir-fry all ingredients until the meat is cooked and changes color.
  9. Slice the large red chilies, then add them to the stir-fry.
  10. Continue stir-frying while stirring constantly to avoid burning.
  11. Add 2 tbsp sesame oil, stir well.
  12. Add 1 tbsp palm sugar, then stir again.
  13. Once cooked, add the basil leaves.
  14. Stir until the basil leaves wilt and the liquid reduces.
  15. Once done, remove from heat and transfer to a bowl.
  16. Prepare a non-stick pan, add a little oil.
  17. Crack an egg, sprinkle with a pinch of salt, fry until half-cooked, then remove.
  18. Repeat until all eggs are fried.
  19. Pad Krapao is ready to be served with rice and fried eggs.
