Ingredients
- 5 eggs
- 180 g black glutinous rice flour
- 100 g granulated sugar
- 1/2 tsp SP (cake emulsifier)
- 40 g cocoa powder
- 1/2 tsp baking powder
- 50 g butter
- 50 ml vegetable oil
- 1 sachet thick coconut milk
- 1 tsp margarine (for greasing)
Cheese Filling
- 200 g cream cheese
- 2 packets sweetened condensed milk
- 1 tsp vanilla essence
Instructions
- Crack 5 eggs, then mix with 100 g sugar and 1/2 tsp SP. Beat with a mixer on high speed until thick and pale.
- Sift together 180 g black glutinous rice flour, 40 g cocoa powder, and 1/2 tsp baking powder to remove any lumps.
- In a separate bowl, mix 50 g butter, 50 ml vegetable oil, and 1 sachet of thick coconut milk. Stir until well combined.
- Mix the beaten egg mixture with the sifted flour mixture at low speed.
- Take about 2 tablespoons of batter and mix it into the butter, oil, and coconut milk mixture. Stir well.
- Pour this mixture back into the main batter and mix until smooth and even.
- Grease a baking pan with 1 tsp margarine evenly so the cake won’t stick and will be easy to remove after steaming.
- Pour half of the batter into the pan, then gently tap it to release air bubbles.
- Steam for 10 minutes, covering the steamer with a clean cloth to prevent water from dripping onto the cake.
- While waiting, prepare the filling: mix 200 g cream cheese, 2 packets sweetened condensed milk, and 1 tsp vanilla essence. Beat with a mixer at low speed until smooth.
- Put the cream mixture into a piping bag for easier filling.
- Once the first layer is cooked, remove the cake and slice it horizontally in the middle to make space for the filling.
- Fill the middle layer evenly with the cream cheese mixture.
- Pour the remaining batter on top, tap gently, and steam again.
- Steam for another 15 minutes until fully cooked.
- Let the cake rest for 5 minutes to release the steam before transferring it onto a flat plate larger than the pan.
- Your soft and fluffy black glutinous rice steamed cake is ready to serve!
