Ingredients
Spaghetti
- 3 tomatoes, boiled and peeled
- ½ onion (Bombay onion)
- 4 cloves garlic
- 4 dried bay leaves
- 1 tbsp dried oregano
- 3 tbsp tomato paste
- 4 tbsp tomato sauce (ketchup)
- 2 tbsp sugar
- 1 tsp salt
- 1 tsp white pepper
- 1 tsp seasoning powder
- 150 g minced beef
- 350 g minced chicken
- Spaghetti no. 10
Chicken Wings – Marinade Ingredients
- 1 egg
- 3 cloves garlic
- 1 tsp seasoning powder
- 1 tsp chili powder
- 4 tsp palm sugar powder
- 1 tsp salt
- 2 tbsp sesame oil
- 1 tsp paprika powder
- 2 tbsp tapioca flour
- 500 g chicken wings
- 1 tbsp oyster sauce
Chicken Wings – Dry Coating Ingredients
- 3 tbsp tapioca flour
- 3 tbsp all-purpose flour
- 1 tsp salt
- 1 tbsp garlic powder
- 1 tsp white pepper
- ½ tsp baking powder
Cooking Instructions
- Finely chop the garlic.
- Add 1 egg.
- Add chili powder and seasoning powder.
- Add 2 tbsp tapioca flour.
- Add sesame oil and oyster sauce.
- Add paprika powder.
- Add palm sugar powder and salt.
- Mix everything together until well combined.
- Place in a plastic bag, then vacuum seal.
- Refrigerate for at least 30 minutes.
- Blend the boiled tomatoes until smooth, set aside.
- Finely chop the onion and garlic.
- Heat oil, sauté garlic and onion until fragrant.
- Add minced beef and chicken, stir until combined with garlic and onion.
- Pour in tomato juice and add about 500 ml of water.
- Add tomato paste and bay leaves.
- Add another 300 ml of water.
- Add oregano, sugar, salt, and white pepper, stir well.
- Add tomato sauce, simmer until the liquid reduces by half.
- Taste and adjust seasoning.
- Pour the sauce into a bowl and set aside.
- Boil water in a pot, add a little cooking oil and a pinch of salt.
- Once boiling, add spaghetti, cook for 6–7 minutes.
- Drain and add a little oil so it doesn’t stick, set aside.
- Mix 2 tbsp tapioca flour with all-purpose flour.
- Add garlic powder, white pepper, seasoning, and salt.
- Prepare the marinated chicken wings.
- Heat cooking oil until hot.
- While waiting, coat the wings in the flour mixture, repeat until all are covered.
- Once oil is hot, fry wings until golden brown.
- Flip occasionally to cook evenly.
- Once cooked, remove and drain.
- Repeat the process until all wings are fried.
- Arrange neatly on a serving plate, add chili sauce for extra flavor.
